L'Heretier Guyot is a producer of crème de cassis and other fruit liqueurs based in Dijon, at the northern end of the famous Burgundy region the Cote d'Or. L'Heretier Guyot was founded in 1845, and today owns over 40 acres of cassis orchards near the village of Vougeot. 

To make their crème de cassis, ripe cassis berries are picked, brought to the distillery, and are macerated in alcohol for a two month period. 100 kilograms of berries are infused into 12.5 liters of 100 proof alcohol. Once the maceration period is complete, the cassis infusion is strained and sweetened with beet sugar to 400 g/l of residual sugar content. 

Crème de cassis that is made through the infusion method (the best ones are) will oxidize slowly over a period of 2-6 months. It is important to keep it cool and away from light. 

L'Heretier Guyot's crème de cassis is a vibrant purple-red color and clear. It has a strong aroma and flavor of sweet and sour blackcurrants, with a moderate note of their woody, leafy stems. It is 40 proof.
