Macchu Pisco is a brand of [ingredient=pisco pisco] made by the Macchu Pisco company in the Ica Valley of Peru and imported by Domaine Select. Macchu Pisco is made from 100% Quebranta grapes, which are considered non-aromatic. The grapes are crushed by foot, and the resulting must gently pressed before the stems and seeds are removed. The goal here is to preserve delicate aromas and flavors and to minimize bitterness.

After fermentation, the wine is distilled in a pot still until it reaches 80 proof naturally - it is not distilled to a high proof and cut back to bottling proof with water, thus preserving body and aromas that would be lost in a more aggressive distillation. Macchu Pisco is unaged, clear, and bottled at 80 proof.
