Dry Sake is a type of [ingredient=sake Sake] with a positive value on the Nihonshu-do (Sake Meter Value). The SMV is a comparison of the specific gravity of a sake as compared to water, where a 0 SMV is equal to 1 specific gravity. To illustrate this, a sake with a SMV of -10 has a specific gravity of 1.0070, where one at +10 has a specific gravity of .9931. 

Originally, negative numbers of SMV were equivalent to sweeter sake, but today, the 'break-even point' is +3 (i.e. anything over +3 is dry, anything lower is sweeter). The SMV ranges from -20 to +20. 

As very many high-quality sake labels are almost completely in Japanese, looking for a positive or negative number on the label can help the sake buyer understand the type of sake they're buying.
