Strawberry juice is the liquid resulting from crushing or pureeing [ingredient=strawberry strawberries]. Juicing the fruit preserves more of the acidity, so that strawberry juice is less thick and less sweet tasting than either [ingredient=strawberry-puree strawberry puree] or [ingredient=strawberry-syrup strawberry syrup]. 

The easiest way to make strawberry juice is to simply cut the green tops off of strawberries and crush them, then separating the juice from the solids. A fine, delicate version can be made by letting strawberry puree drip through a few layers of damp cheesecloth overnight in the refrigerator, though this tends to lack vibrant red color.
