Siembra Azul is a brand of [ingredient=tequila tequila] grown and distilled near the town of Arandas, near Jalisco, Mexico. Siembra Azul is a highland tequila, which typically has more fruit flavors in the resulting spirit than the earthier lowland versions.
Siembra Azul is a partnership between David Suro, a tequila lover and entrepreneur and Hector Silva, who oversees operations. They hand harvest mature piñas that are grown with minimal pesticides, then roast and crush them. Fermentation takes place with Champagne yeast. The resulting liquid is then distilled twice in copper pot stills.
Siembra Azul makes three tequilas: Blanco, Reposado and Añejo. The Reposado and Añejo are aged in new American oak barrels for three months (for the Reposado) and between 12 and 36 months (for the Añejo). All Siembra Azul tequilas are 80 proof.
