Rompope (pronounced rom-po-pay) is a liqueur made from rum, eggs, sugar and vanilla that is similar to both eggnog and the Dutch Advocaat, but is indigenous to Mexico. While there are many commercial versions of rompope, it is often found homemade, and served atop crushed ice, or alongside desserts.
Most rompope is a pale yellowish color and opaque, with a flavor quite similar to thinned out pastry cream. Most commercial brands of rompope are low in alcohol, around 20-30 proof, though homemade versions can be much higher.
