Burnt Sugar Syrup

Burnt sugar syrup is a type of simple syrup where the sugar is taken to the point of caramelization before the water is added, resulting in a dark brown color and a slightly smoky, bitter flavor. 

Used in small amounts, burnt sugar syrup could be an interesting "oaky" note in cocktails, as it should mimic the flavor of toasted wood.
