Strawberry juice

Strawberry juice is the liquid resulting from crushing or pureeing strawberries. Juicing the fruit preserves more of the acidity, so that strawberry juice is less thick and less sweet tasting than either strawberry puree or strawberry syrup

The easiest way to make strawberry juice is to simply cut the green tops off of strawberries and crush them, then separating the juice from the solids. A fine, delicate version can be made by letting strawberry puree drip through a few layers of damp cheesecloth overnight in the refrigerator, though this tends to lack vibrant red color.
