Strawberry puree is a homogenized semisolid form of strawberries. It is easily homemade by rinsing fresh strawberries, cutting off the green top, and either stick blending or pureeing them in a blender. The resulting mass can be put through a strainer to remove the seeds, sweetened if desired, and preserved with a bit of vodka.
Strawberry puree can preserve the aroma and flavor of peak-ripeness strawberries. In cocktails, strawberry puree lends color and musky aroma to drinks, along with sweetness.
