Chocolate extract is a solution of cacao nibs, macerated in alcohol and water. Some volatile aromatic components of cacao are lost in the process that turns the raw nibs into chocolate, and chocolate extract attempts to replace those.
Like other extracts (vanilla for example), the best chocolate extracts are simply cacao, alcohol and water, though some have additional flavor agents such as almonds or vanilla.
