Elisir M.P. Roux is a contemporary herbal liqueur invented by Michel Roux and flavored with fourteen herbs and spices: Bitter Almond, Lemon Balm, Cinnamon, Diamiana, Ginseng, Lemon, Nutmeg, wild Angelica, Garden Balsam, Coriander, Fennel, Hyssop, Marjoram, and Star Anise.
The flavor reflects the complexity of its botanicals, with an complex presentation of pie spice and sweet herbs, with a touch of anise (but not so much as to offend anise-haters). It is dark amber in color and quite sweet. If unavailable, use consider Yellow Chartreuse as a substitute, perhaps with a bit of falernum for spice.
Elisir M.P. Roux is bottled at 94 proof and comes in a 1 liter, rather than 750 ml, size. It is imported into the United States by Crillon Importers.
