Pomegranate molasses is a thick syrup made from pomegranate juice cooked down with sugar until a syrup is formed. It differs from [ingredient=grenadine grenadine] in that pomegranate molasses is much further reduced, which introduces cooked flavors into the syrup, and changes the color from a vibrant crimson red to a reddish brown color as the sugar caramelizes.
Pomegranate molasses is used extensively in the cuisines of Persia, Lebanon, Armenia and Georgia, and many of the best commercial brands come from one of those countries.
