Surfer Rosa

1 1⁄2 oz Mezcal, Del Maguey Vida (Hibiscus-infused (see notes))
3⁄4 oz Lemon juice
1⁄2 oz Bénédictine
1⁄2 oz Sweet vermouth, Carpano Punt e Mes
2 oz Club soda, Fever Tree
Instructions

Shake; strain over soda on ice; collins

Notes

To infuse the Mezcal: add 25g hibiscus flowers for a 750ml bottle of Mezcal and soak for 4 hours.

I did it a proportional amount of hibiscus for about 10 minutes with a single NO2 charge from an iSi whipper. Worked great.
