1 1⁄2 oz Gin, Beefeater
3⁄4 oz Lemon juice
3⁄4 oz Pear liqueur, Merlet
1⁄4 oz Simple syrup (1:1 simple syrup based on weight not volume.)
Shake with ice. Strain into absinthe rinsed coupe. Float a whole star anise.
This drink works well with Cognac or Vodka in place of gin.
