De Rigueur 2

A variant of the De Rigueur as served by the Roosevelt Room bar in Austin, TX.
1 12 oz Bourbon (Bonded; or Sub Scotch (Famous Grouse or Chivas work))
1 oz Grapefruit juice
12 oz Honey syrup (1:1 honey and water, boil and reduce)
12 bsp Scotch, Lagavulin 16 (can sub Laphraoig or other smoky Scotch)
12 bsp Scotch, Balvenie 12 Doublewood
Combine all ingredients in shaker with ice. Shake, strain into coup or martini glass. Double strain if using fresh grapefruit juice.
