A Spontaneous Libation for your Consideration

Sakura Reviver

Posted by ShakeAndDestroy. Created by Joshua Perez, Bar TRENCH, Tokyo.
1 oz Gin, Monkey 47
3⁄4 oz Lemon juice
1⁄2 oz Sakura liqueur
3 ds Absinthe
Instructions

Add ingredients to shaker, shake, and strain into chilled coupe. Garnish with a brandied cherry.

History

The classic Corpse Reviver #2 remixed into a spring floral variation with sakura and salt. Created for a guest shift with Monkey 47, but Suntory Roku has also been a go-to gin with the addition of a grapefruit peel in the tin or a dash of Scrappy's Grapefruit bitters.

I’m finding I also like this with an equal part saline to absinthe, instead of the cherries.

    Delicious, clean flavor and bright.

I agree that it's a bit high on the citrus, so more tart than sweet, but I'm okay with that. Not terribly complex but not quite a juice bomb either. I feel like the Heering comes through in a subtle way, and adding a bit more tames the acid but adds too much of the cherry syrupy-ness.
