Kübler is a Swiss brand of [ingredient=absinthe absinthe] first developed in 1863 by J. Fritz Kübler in the village of Motiers, near the eastern border of France. His absinthe did remarkably well, but ceased production after the Swiss government banned absinthe in 1910.
After the ban on absinthe production was lifted nearly 100 years later, Kübler's great-grandson Yves restarted production of his great grandfather's absinthe using the original 1863 recipe. Kübler is a wheat-based spirit that is infused with grand wormwood, anise, hyssop, lemon balm, coriander, star anise, fennel, Artemisia Pontica, and mint, all of which grow locally in the Val de Travers.
Kübler is an example of absinthe "La Bleue", a clear variety of absinthe native to Switzerland. Kübler is neither artificially colored or flavored, and is much lower proof (106 degrees) than most absinthe that are closer to 140.
