Amaro Daiquiri (Billy Sunday)

1 oz Braulio
1 oz Amaro, Cappelletti Sfumato Rabarbaro
1⁄2 oz Gomme syrup (or 3/4 oz 1:1 simple syrup)
3⁄4 oz Lime juice
1 sli Lime (garnish)
Instructions

Shake with ice and strain into chilled coupe. Garnish with lime wheel.

Notes

I believe their gomme syrup is 2:1 with gum arabic (I haven't been there since late last year). I've found .5 oz 1:1 simple syrup is fine for me, your mileage may vary.

    Presumably the 7yr as that is the only one I have ever come across. It is the basic Old Monk. Unless stated otherwise in a recipe, assume this is the one.
