A Spontaneous Libation for your Consideration

Spring Daiquiri

2 oz Light rum
3⁄4 oz Lime juice
1⁄2 oz Strawberry syrup (House made, see note)
810 lf Basil (Fresh)
23 dr Salt Solution (80:20 mix)
Instructions

Gently press basil leaves with the Rum.
Add rest of the ingredients.
Shake hard until really cold.
Strain into chilled coupé/Nick&Nora
Garnish with black pepper

Notes

Equal weight fresh chopped strawberries and caster sugar. In a jar let the sugar draw the juice in a cold process. 12-24 hrs. Stir as required. Fine strain into bottle and refrigerate. Last approx 5 weeks.

History

I love making my own syrups and this Strawberry syrup tastes authentically of fresh strawberry juice. Not jammy, ie. cooked, or thick, ie. blended.
