1 1⁄2 oz Pineapple rum, Plantation Stiggin's' Fancy
3⁄4 oz Lime juice
3⁄4 oz Orgeat
1⁄4 oz Orange flower syrup (scant)
1⁄2 oz Egg white
1 oz Soda water
Dry shake, shake, strain into a fizz glass, top slowly with soda poured over the back of a barspoon until the egg white blooms.
