1 3⁄8 oz Pisco
1⁄2 oz Moscatel Sherry
1⁄2 oz Lemon juice
2 t Honey (truffle honey)
2⁄3 oz Egg white
1 pn Black pepper (as garnish)
3 pn Parmigiano Reggiano (as garnish)
Instructions

Combine ingredients, froth egg white, add ice and shake, garnish with grated pepper and generous fresh-grated cheese.
