Unusual Safari Pour

1 oz Jamaican rum, Appleton Estate V/X
1 oz Jamaican rum, Wray & Nephew Overproof
3⁄4 oz Lime juice
1⁄3 oz Pineapple juice
1⁄3 oz Hibiscus syrup
1⁄4 oz Simple syrup
1 oz Egg white foam (see note)
Instructions

Shake, strain, coupe, add foam.

Notes

Foam: Tonka and gentiane. In shaker add 1 egg white, 1/3 lime juice, 1/4 simple, 1/3 suze, grated tonka. Put a spring in shaker, and shake. Check foam and pour.
