Le Marseille Fruits Fizz

2 oz Gin, Plymouth
1 oz Elderflower liqueur, St. Germain
3⁄4 oz Lemon juice
1⁄4 oz Simple syrup
1 ds Orange bitters
1 Egg white
1 cube Fruit (your choice of muddled fruit)
1 oz Club soda
Instructions

Add ingredients to a shaker without ice and shake vigorously to emulsify egg white. Add ice, shake again, and stain into a tall Collins glass, sans ice.
