  • Pretty fantastic balance, though I did fill my barspoon to overflowing with Suze, and I think that helped. The vanilla notes in the cognac and Suze meld together beautifully—if your brandy of choice isn't vanilla-forward like Pierre Ferrand is, swap in one that is. Somehow lands as pastry-adjacent without being sweet or dessert-like. Check out Gruneich's other drinks on this site; Gruneich's hybrid of culinary inspirations and a respect for the classics result in interesting combinations that get a bartender's brain going, and this one is no exception. Puzzling in a delightful way. Would order multiple times. — ★★★★★
  • I would have rated this 2 stars as written - by increasing the Suze to ~ 1/4 or 1/3 of an ounce, the drink was better.

Everything is working in this and no one upstages the other. Suze is timid but adds necessary bitter. Cointreau does some heavy lifting as a supporting role. Cocchi adds some surprising spice. Cognac is clearly the star but is generous to the rest of the cast...

Didn't notice that it was lacking in Suze, though I did also do a generous barspoon rather than a scant barspoon. Definitely something pastry-like going on here, unexpectedly...I'm trying to figure out how to incorporate a brown butter wash and an egg yolk to bring out some of those French bakery flavors I'm detecting...
