Isle of Golden Dreams Rhum Negroni

1 1⁄2 oz Rhum Agricole, Neisson blanc
1 oz Aromatized wine, Cocchi Americano
1⁄2 oz Suze
1 ds Salt Solution (Sea salt tincture 1:1)
1 twst Lemon peel
1 spg Rosemary
Instructions

Stir ingredients together in a mixing glass with ice. Strain into coupe. Garnish.

  • A rhum agricole white Negroni. The rosemary actively put me off - just a pungent note that is nowhere in the drink itself. Otherwise fine. Coltivare (the bar this is from) is produce-oriented, so the rosemary likely fit a house brief, but I'd skip it. Grapefruit twist or (temperamental but sometimes interesting with agricoles) Thai basil leaf instead. Polka Dot Negroni remains the white Negroni champ for me. — ★★★

Rosemary is unneeded and in fact a bit dissonant when included. Substitute a grapefruit peel for the lemon peel to amplify rhum agricole grassiness, if you wish.
