1 oz Mezcal
3⁄4 oz Aromatized wine, Cocchi Americano
1 pn Salt (Small pinch)
1⁄8 t Agave syrup
Instructions

Combine all ingredients into a mixing glass.
Stir with cubed ice.
Strain over large cube in double rocks glass.
Garnish with expressed orange and lemon peels.

  • Honestly really interesting - the Cocchi Americano and smoke play together well. Seen from a certain perspective, you could describe this as a Oaxacan Old Fashioned that has been lengthened with quinine. I'm just taking off a point for the fussiness. 1/8 of a teaspoon is just painful at most bars, still is a bit awkward at places dedicated craft cocktails, and I would go so far as to say that even for home enthusiasts it can risk coming off as precious. Perhaps more to my point, I tried swapping out the orange liqueur for others, and because the orange liqueur is only at 1 teaspoon, it made meager difference which I used. I tried a fatter pour on the liqueur or the Cocchi Americano instead of the 1/8 tsp of agave syrup; that worked. I also tried 1/8 tsp of simple syrup instead, and then 1/8 tsp of demerara syrup, and it's again too small of a volume to matter - all worked for achieving the same result. Great drink, frustrating spec. A lot of times when specific brands are called for, you should pay attention. Here Mr. Potato Head the spec quite readily - little change in the final product. — ★★★★
