Instructions

Dry shake for 10 seconds, wet shake for 10-15 seconds. Double strain, serve up in glass of your choice, claret glass recommended. Grate the coffee bean over top as garnish.

Espresso is preferred by the creator. Cold brew concentrate is given as an alternative if espresso is not an option.

History

For my drink of the day at Loyal Nine, I was inspired by the Mr. Howell (white rum, lime, maple, Islay Scotch) to create a smoky Sour. I decided to make it funkier with rhum agricole and mezcal. I kept the Mr. Howell's maple syrup and lime juice components but added in some Angostura Bitters spice to dry out the maple a touch. For a name, I decided on a song title from the Television Personalities from 1987 that was perhaps named after a 1984 British television drama series.

History

I decided to tinker and continue on with my rhum agricole-mezcal stirred drinks that started with Up Jumped the Devil and followed by Stranger than Kindness. This time I went with the Cynar-apricot duo that I learned to appreciate in the One One Thousand, and I utilized Punt e Mes to bolster the fruity and bitter notes. For a name, I kept with the Nick Cave song titles concept with Henry's Dream.

Pea Flower Cocktail

1 oz Tea (Pea Flower)
3⁄8 oz Maraschino Liqueur, Leopold Brothers
1 oz Gin
1⁄2 oz Orange liqueur, Cointreau
1⁄2 oz Bianco Vermouth

Combine in shaker with ice. Strain. Coupe or lowball, with or without one ice cube.

Notes

The pea flower tea gives this drink a lovely lavender color with a very subtle taste.

Variation on an Aviation that uses Jackson Hole Still Works Absaroka gin, named after the Absaroka mountains in Wyoming and has a distinctive cinnamon and spice flavor and Chambord in place of creme de violet. I'm sure it would taste great with a more traditional gin as well. Actually made it for the first time during winter, and it was great.

I didn’t have old Tom gin so I used London dry, and I misread the recipe and used dry vermouth instead of Bianca, but I actually really liked it. And the good news is it wasn’t too sweet. Also I stirred it. Don’t see why you would shake this one.
