Very nice, savory/ancho, agave with moderate heat and only mild sweetness. Made per recipe w/ Patron Silver and Hacienda de Chihuahua Reposado Sotol, used my own pomegranate grenadine. I need to make some cocktail onions to go with this since I threw out my old bottle of unpalatably hard store bought cocktail onions--I added a pinch of salt to compensate in the drink which likely augments its savory character.

King Louie

3⁄4 oz Rye
3⁄4 oz Cognac
1 oz Bonal Gentiane Quina
1⁄2 oz Crème de Banane
2 ds Bitters, Bittermens Xocolatl Mole
1 twst Lemon peel (As garnish)
Instructions

Stir with ice, strain into a glass, and garnish with lemon oil from a twist.

History

After a recent bar shift, I was inspired to tinker with banana liqueur that I last used a few days prior in the Origami Ape with the recipe structure of the 1919 Cocktail. For a name, I dubbed this one the King Louie after the orangutan who appears in Disney's 1967 movie The Jungle Book; King Louie was not in Rudyard Kipling's book but was cast for, voiced by, and named after New Orleans singer Louis Prima. It also fit since the recipe had a New Orleans feel to it.

History

Recently, I had a guest at work who wanted a Rusty Nail, and I began thinking about Drambuie. I then recalled the delightful Brambuie-Fernet combination in the Bittered Old Coot and Bonita Applebum, and I took things in a Cognac and pineapple rum direction later that evening. For a name, the song "Big Spender" by Peggy Lee was on the sound system, and I went with it.

Autumn in the Poconos

2 oz Applejack, Lairds
1 oz Pear liqueur, St. George
1⁄2 oz Apple Shrub (See Note)

Instructions

Combine all ingredients in glass. Stir with ice.

Notes

Apple Shrub - shred about three apples (1.5 cups). Combine with 3/4 cups raw sugar (demerara or other complete cane sugar) and about 1 cup apple cider vinegar in mason jar or Tupperware container. Add two star anise pods and about six or seven allspice berries. Shake well Refrigerate for two days. Strain well, squeezing juice from apple shreds. Rebottle into new container. Should remain useable for about six months.

Err from the Faith

2 oz Rye, Rittenhouse

Instructions

Stir all ingredients until chilled and strain into at least a 5 oz coupe. Garnish with an Orange Peel expressed over the drink and rim and a pod of Star Anise.

Notes

This is a Manhattan/Improved Whiskey Cocktail/Bronx riff. So while it is sweet, I think it's pretty complex.

The sweetness of the Grand Marnier and Maraschino liqueur is met with alpine spice from the Braulio Amaro. This works well with the spice of the Rittenhouse Rye and is further bolstered by the the Star Anise pod.

History

This is a riff on the Root of All Evil cocktail created by Jeff Grdinich at White Mountan Cider Company in Bartlett, NH. Where he used bourbon and Fernet, we swapped in Rye whiskey and Braulio Amaro. We also added the star anise pod as a garnish.

I tried the original recipe last October. It showed promise, but was too sweet for my tastes. I made a note to retry it with reworked proportions emphasizing the Braulio while reducing sweeter components. After remaking I was pleased with the result and suggest the following changes: 3/4 oz Braulio, 1/2 oz Grand Marnier, 1/4 oz Luxardo Maraschino. All of the flavors were recognizable, but without being overbearingly sweet. This is still a very high potency drink at 1.44 oz alcohol.

Bitter Squeeze

1 1⁄2 oz Gin
1 1⁄2 oz Sweet vermouth
1⁄2 oz Amaro (Use Bellini Amaro delle Terme)
3⁄10 oz Lemon
Instructions

Stir with ice in a cocktail shaker, strain and pour into a martini glass.

I spent quite a bit of time stirring the honey in to get it to dissolve. Not nearly enough citrus to make the "daiquiri" label in the description really work. Nice drink though!
