Espresso Martini (Patrick Smith version)

3⁄4 oz Espresso
3⁄4 oz Coffee liqueur, Mr. Black
1⁄2 oz Vanilla liqueur, Giffard
1⁄4 oz Demerara syrup (1:1 water:sugar ratio)
3 Coffee bean (Garnish)
Instructions

Shake with ice, double-strain into a chilled coupe or cocktail glass. Garnish with coffee beans.

1 1⁄4 oz Rum, Privateer (Any non-funky aged rum would work here)
3⁄4 oz Lemon juice
1⁄4 oz Falernum
Instructions

Combine all ingredients in a mixing tin with a small amount of crushed/pebble ice for a whip shake until chilled and foamy on top (appx. 15 seconds). Pour with the ice in the tin over additional crushed ice to top of glass and garnish with plenty of mint. Optional additional garnish: a skewered banana slice that has been dipped into sugar and torched until caramelized.

I am not a fan of the basic Last Word recipe because of how the lime acidity pummels it in the fully equal parts recipe. All Last Word versions improve as they warm, since the acidity mellows and the sweetness begins to balance, and the herbal elements begin to come forward. This version is a refreshingly fruity riff, giving us apple & rhubarb in place of juniper and cherry pit flavors. I used Busnel Calvados and Giffard Rhubarbe.


Cloud Forest Negroni

1 oz Rum, Paranubes
1 oz Salers Gentiane
1 twst Grapefruit peel (expressed and discarded)
Instructions

Stir with ice, strain into a rocks glass over ice, express and discard twist.

Instructions

Rinse or spritz chilled rocks glass with Herbsaint. Stir other liquid ingredients with ice and strain into prepared glass (without ice, à la a Sazerac). Express an orange twist, then fold it into a pouch clipped onto the inside of the glass with a star anise set inside as a garnish.

History

Loosely based on a Negroni template, inspired by Pedro Chicote's cocktails with sherry quina from 1947 and earlier, as well as Spanish gins. Uses a vino amaro for the red bitters, and a sherry quina in place of vermouth. Spanish bitters (based on a resurrected historical recipe) add chamomile and kick to the sherry/wine/juniper palate.

Mahón Gin has been distilled in Menorca for 300 years and has a single botanical: locally harvested juniper. The juniper in this gin is intense.

History

I mashed up two drink halves: the mezcal-pineapple rum that worked well in my Devil's Kitchen and Illegal Dance Moves with the Sfumato-cinnamon of my Hell Haggerty and Idlewild's Armstrong. For a name, I dubbed this one the Cannibal Cove after a section of the Tarawa coast that I learned about in the The Sex Lives of Cannibals book.
