2 oz Mezcal, Del Maguey Vida
3⁄4 oz Lemon juice
3⁄4 oz Agave syrup
4 sli Ginger
Instructions

Muddle ginger and agave. Add ice, lemon juice and mezcal. Stir. Double strain over spherical ice cube in an old fashioned glass.

It's one of their "regional" bitters. Ostensibly available "only" in NOLA, I found them online. Coffee, cacao nibs & chicory... Delicious. I'm up to 29 different bitters in my collection, and this is one of my new favorites.

Snoop Lion (or, Fo'Swizzle)

1 1⁄2 oz Jamaican rum, Smith & Cross
1⁄4 oz Batavia Arrack, Van Oosten
1⁄2 oz Grapefruit juice (white)
1⁄4 oz Lime juice
1⁄2 oz Passion fruit syrup, B.G. Reynolds
1⁄4 oz Maraschino Liqueur, Luxardo
Instructions

Shake, pour un-unstrained into a double rocks glass.

Notes

'Lion' is an old-fashioned term for a sour sweetened by both a liqueur and a syrup or nectar. A Snoop Lion is simply the dankest Lion. The passion fruit syrup and maraschino liqueur draw out the rum's overripe tropical fruit esters and smokey musk, respectively. Originally made with cocktail grapefruit, a different species of citrus from regular grapefruit, comparatively mellow, sweet, and fragrant. Using white grapefruit juice adds bitterness and structure.

Pendergast

1 1⁄2 oz Bourbon

Instructions

Combine ingredients in a mixing glass and stir with ice cubes until chilled. Strain into a double rocks glass without ice, then garnish with a lemon twist.

History

Tom Pendergast, the 1920s and 1930s Kansas City political boss, may have gone down for corruption but this no-nonsense cocktail is clean as a whistle. Developed by Kansas City bartender Ryan Maybee, it’s become a contemporary classic in the city, showing up on cocktail menus all over town.

I'm Just Here for the Drinks includes the Pendergast #2, also from Maybee, which reduces the whiskey and uses orange bitters:

0.5 oz J Rieger's Kansas City Whiskey (which has a small amount of sherry added in the finished product)

Mano Negra

1 1⁄2 oz Virgin Islands Rum, Cruzan Blackstrap
1 oz Lemon juice
1⁄2 oz Falernum (dark)
1⁄4 oz Passion fruit syrup, B.G. Reynolds
1 ds Aphrodite bitters, Dr Adam Elmegirab’s Aphrodite Bitters
4 dr Jamaican #1 bitters, Bittercube
Instructions

Shake til frosted with plenty of fresh ice, then dump unstrained into a chilled rocks glass. Optionally, express and discard a lemon peel. Add two or three more drops of Jamaican #1 bitters for aromatics.

Notes

A dark and spicy sour with glints of tropical fruit, balanced to a little shy of Tiki sweetness. For a stronger, drier, less molasses-intensive drink, substitute half (or more) of the Black Strap with Lemon Hart 151.

Falernum syrup: make Rick from Kaiser Penguin's rich falernum (here: http://www.kaiserpenguin.com/remixed-astro-aku-aku/ ), but add 1T of medium-roast coffee beans and .5T of pecans and toast them with the other spices. Any homemade should be a fine substitution, as should commercial syrups (e.g. B. G. Reynolds). If using Velvet Falernum, substitute half with allspice dram.

Seriously  my favorite cocktail to introduce guests to amaros and floral elements. perfectly balanced. excellent mouth feel. killer nose. i like it with a big rock and a long tightly curled thin orange twist.  

The Departed

Love it. Used Santa Teresa for the rum and Ramazzotti for amaro. Just what I had on hand. And that's saying something because I'm not a huge Campari fan. For my girlfriend I call this drink "Love to hate or hate to love?" because she loves Campari and amari in general but despises mezcal more than any other alcohol.

Like many drinkers, I'm not terribly fond of heavily peated drinks, but "The Departed," I found to be within my level of tolerance for peated drinks. As a result, this drink more than tolerable, but actually enjoyable. The Campari was able to assert itself over the Mezcal, and the El Dorado 15 (which I used), provided some appreciable sweetness, and the orange zest gave a nice, contrasting flavor to the drink (in hindsight, I wish I had added more orange zest than I did).

Overall, I found this drink to have many flavors that worked together to provide the drinker with a memorable drink, which I rated at 4.0. In short, "The Departed" should have a long life, and give a lot of pleasure to those who enjoy a better than average drink.

Substituted wildly: Contralto Bitter, Pyrat XO, Foro amaro, Vida, Peychaud's and a dash of Regans' Orange. Interesting patten. Needs more experimentation.

Round two, as written, but with El Dorado 15. Very nice, but dramatically improved with 1/2 oz dry vermouth. I used Dolin.
