Cutman

1 oz Herbal liqueur, Jeppson's Malort
3 wdg Lemon (3-4 wedges)
6 lf Mint (6-8 leaves)
1 pn Salt (Or 3-5 drops 20% Saline)
1 spg Mint (Or more sprigs as garnish)
3⁄4 oz Apricot liqueur
Instructions

Muddle the lemon and salt (the ice in the shake will muddle the mint leaves). Add the rest, shake with ice, double strain into a double old fashioned glass, fill with crushed ice, and garnish lavishly with mint.

History

After having Nick Jarrett's Prizefighter No. 2, I was inspired to riff on it like I did after imbibing his Prizefighter No. 7 with my Cornerman riff. For a bittering agent to be mollified by the salt, I opted for Malört, and I figured that apricot liqueur would pair rather well with it. For the third element, I was going to go with the more traditional sweet vermouth until I remembered how well Swedish punsch works with apricot -- something that I learned from the classic Havana Cocktail that I utilized in the Tainted Love, Gunwale Punch, and other drinks. Finally, the name Cutman came to me the last time I riffed on the Prizefighter series, and I kept it in mind for the next time. Indeed, a good cutman is invaluable in the corner to minimize the effects of absorbed strikes and thus prolong the fighter's unobstructed vision and breathing, and in the end is not as gruesome as it sounds.

Le Kern's

Instructions

Shake vodka, crème de cassis, and lime juice with ice until well chilled. Strain into a balloon wine glass over a large clear ice sphere. Top with brut cider and stir gently. Garnish with a thin slice of red apple on the rim and a few floating red berries.

Sour Blueberry Negroni

1⁄2 oz Sour beer (Aged Blueberry llambic)
1⁄2 oz Bianco Vermouth (Basque Producer Atxa)
3⁄4 oz Gin, Nolet's
3⁄4 oz Campari
1⁄2 oz Cappelletti Aperitivo
1⁄2 oz Red wine (Blueberry Wine, Kelley Fox Wines)
1 twst Lemon peel (as garnish)
Instructions

Build all ingredients together in glass on a BFC, stir till chilled and then garnish with a lemon twist

Notes

The blueberry wine used in this recipe is quite dry and drinks like a dry red wine, but most blueberry wine @‘ the market is quite sweet.

Instructions

Mix everything but soda over ice (we used a collins glass) and top with soda. Garnish with grapefruit slices.

Notes

We discovered BroVo looking for a Chartreuse alternative (their Uncharted Rhapsody American Forest Liqueur). We also liked the sound of their American Aperitivo and this made a very nice deeper Paloma.
