Whiskey Business (Dear Irving)

1 oz Ancho Reyes chile liqueur
1⁄2 oz Lemon juice
1⁄2 oz Cinnamon syrup (Rich cinnamon syrup (2:1))
Instructions

Combine all ingredients in a shaker and shake with ice. Strain into an old fashioned glass over a large ice cube. Garnish with lemon wheel dusted in ancho chile powder.

Notes

Cinnamon Syrup:
2 cups sugar
1 cup hot water
4 cinnamon sticks
Combine all ingredients in a medium saucepan over low heat and stir to dissolve the sugar. Let the mixture cool overnight and strain out the solids before using.

Instructions

Combine all ingredients in mixing glass/tin. Stir with ice, then strain over large rock in a lowball. Garnish with lime peel.

Notes

The banana and maraschino provide a smooth offramp from the Wray & Nephew. Great way to introduce someone to overproof Jamaican rum. And extremely batch-friendly!

This was originally mixed with vodka ad hoc. A floral or junipery gin would likely add a pleasant dimension. The combination of fruit and flower are the real heroes here.

History

This is an original thrown together from what we had in the bar on New Year's Eve in 2017. Named for St. Catherine of Vadstena, after the inclusion of St. Germain and Swedish fruit concentrate—and mixed at the request of a patron named Katherine—this drink keeps coming back around as a notably delicious expression of unique ingredients.

You want straight-up rice vinegar here, NOT "seasoned" rice vinegar which includes added salt and sugar.
If you want a more aerated texture or antique glass look, feel free to shake it.

  • Clear citrusy nose. Tingly sip with a nice balance of acid and sweet. A hint of peach in here too. In the finish the sharpness becomes more recognizable as vinegar.

History

While flipping through Death & Co.'s Welcome Home book, I spotted the Lost Horizon that made me recall the Banana Toronto at Offsuit. That inspired me to use the Fernet-crème de banane duo, and I fused the idea with two Sazerac variations – namely, Trina's Starlite Lounge's Stigginserac and Death & Co.'s Bananarac. The pineapple part made me think of the "Pen Pineapple Apple Pen" song, so I dubbed this one after its artist Pikotaro.
