I also quite enjoy this with an Armagnac - the extra fruit flavor plays well with the raisin of the sherry.
If you prefer a drier drink, this goes incredibly well with rye instead of scotch and a medium sherry (I used oloroso), although the reduced sugar loses a bit of that rich mouthfeel.
