I lacked the courage to try this as a Negroni-format drink, so I used Manhattan-esque ratios: 2:1/2:1/2. Quite good. I might summon the fortitude to try it as written. I'm not a big mint fan, and too much Braulio comes across as Fernet-y to me. I bet this is great for Fernet lovers. Initial curator rating of 3 stars, subject to improvement with more trials.

Once I found the recipe for this, I adjusted from my original variation of 1 oz. Rye, 1 oz Cocchi Americano, 1 oz. Braulio, which Dan is referring to in his comment.

I tried it with both the 1:1:1 ratio and the 1:2:3 ratio using Rittenhouse rye, though after trying both I used up the last of my Cocchi Americano :( The 1:1:1 was a Braulio bomb and too heavy on sugar, while the 1:2:3 ratio felt a bit astringent, grippy from the rye. I suspect that while it would taste better with Bulleit rye (90 proof to Rittenhouse's 100 proof), it would be similarly astringent. There's a really strong drink in here somewhere: the three ingredients have great synergy. I'd love to see if Kobie Ali or any of the folks at Backbar ever rejiggered this, because there's a five-star drink that's possible here I think, with just these three ingredients and some lemon oil. With the two presented ratios, this drink is merely average. May revisit and update this comment if I get more Cocchi.


South Park Sling

1 1⁄2 oz Gin
1⁄2 oz Passion fruit syrup, Monin
1⁄4 oz Aperol
1⁄4 oz Cynar
3⁄4 oz Lime juice
1 sli Pineapple
Instructions

Shake hard or blend for a foamy texture, strain into a collins glass. Garnish with Pinneapple wedge and Luxardo Cherry.

Notes

Use fresh pineapple juice if at all possible.

Made with Drumshanbo Gunpowder gin, Brooklyn Kura Blue Door Junmai sake, and Luxardo Maraschino (and a dash of Regan's orange bitters to make up for the lack of the cherry blossom). The green tea notes of the gin works very, very well - I would recommend using Roku or any other Japanese gin here as well. The drink is well-balanced when using these ingredients; the sake does not overpower the gin's botanicals.

If you can find sake bermutto (vermouth made from sake), consider using it here and increasing the proportion of gin.

Worth saying that the original Sakura Martini specifies a Nama-style sake, for the added brightness. It also seems that in subsequent interviews Goto-san has fine-tuned the recipe, preferring to use 1/8 teaspoon of Maraschino in most iterations I've seen. At Bar Goto Niban, he always pulls out an adjustible teaspoon for this drink as well.

Notes

For bar service, mushrooms should be stored in-fridge. A barback stabs each garnish and places it on the glass as shaking begins, in the Japanese bartending style, to keep service smooth.

If making homemade orgeat, include cloves for that distinctive Alley Twenty Six orgeat flavor - that clove goes with the soy sauce quite well to make that distinctive Chinese Red Braise flavor. If using other, clove-free orgeat, consider doing a rinse with clove-infused rum: 10 cloves, crushed in a mortar and pestle, per 4 ounces of your rum. A clove-rinsed rum can also help you make the Model-T from Boston's backbar.

Stealing Beauty

1 1⁄2 oz Sweet vermouth
2 oz Prosecco
1⁄2 oz Peach liqueur
1⁄2 oz Amaretto
Instructions

Build vermouth, peach liqueur, and amaretto in a wine glass. Add raspberries and gently press just until they split and bleed. Add a large cube placed against the side with drop of orange blossom water. Prosecco last, poured gently down the side of the glass. Give one slow stir — just enough to integrate.

When I first saw the Bertolucci film “Stealing Beauty” I was completely enchanted; less by the plot than by the place — the Tuscan countryside; the light, scents and sounds hanging in the air. This story of first love made me nostalgic for my own first love; for that particular kind of innocence where desire feels new and effortless and time stretches lazily through the afternoon. I wanted to live inside that film — where wine appears as lunch, fruit is eaten with stained fingers, and pleasure is indulged without apology. This drink is built like that memory: bright and buoyant at first, then gradually deeper, warmer, and sensuous by the finish. It’s an afternoon that slips into twilight before you even notice.

History

This cocktail is a variation of the beloved modern classic 'Death and Taxes'. It started with the idea of swapping gin and whiskey for mezcal and brandy. The name comes from the joke that if death and taxes are unavoidable in life, then marriage and business should be avoided whenever possible. Incidentally, taking the first letters of the spirits also spells M & B.

However, further research revealed many similar cocktails like the 'Plaza Vieja', or variations like 'Souls of the Mountain', 'Dolores del Rio', and '1910' – essentially the same mezcal and brandy combo with just the 'Punte Mes' spot swapped. This made me agonize over how to create a meaningful variation. After much discussion and trial and error, the final solution emerged: replacing 'Punte Mes' with 'Coca Americano' and 'Montenegro'. When I tried it, the result was incredibly satisfying, leading me to introduce it here.
