Wooden Shoe

3⁄4 oz Genever
3⁄4 oz Apple brandy (Aged such as a VS Calvados or Laird's Bonded)
1 oz Cardamaro
1⁄4 oz Bénédictine
1⁄4 oz Herbal liqueur, Yellow Chartreuse
1 twst Lemon peel (As garnish)
Instructions

Stir with ice, strain into a cocktail coupe, and garnish with a lemon twist.

Notes

Earthy, malty, herbal.

History

I was inspired by a tasty Genever-Cardamaro drink and reading about apple brandy-Cardamaro duo on the Haus Alpenz site, and I wondered if I could fuse the two ideas. The apple brandy aspect made me think of the Widow's Kiss and its Benedictine-Yellow Chartreuse accents. For a name, I looked up Dutch fairy tales to support the Genever ingredient and was inspired by the "The Legend of the Wooden Shoe."

Berry Wall

1 1⁄2 oz Bourbon
1⁄2 oz Campari
1⁄4 oz Allspice Dram

Instructions

Muddle the strawberry in the Campari and allspice dram. Add the rest of the ingredients, stir with ice, and double strain into a rocks glass with a large ice cube. Garnish with an orange twist.

Notes

A Boulevardier "man about town" riff utilizing the tasty Campari-strawberry and Campari-allspice dram combinations.

History

A discussion about the important role that Saratoga Springs in NY had in the late 1800s brought up Jerry Thomas' and Harry Johnson's Saratoga Cocktail recipes, and then it drifted into Berry Wall and his his dude-off where he won the title of the "King of the Dudes" by changing outfits 40 times between breakfast and dinner. I figured that his name alone was worthy of a drink tribute.

Carlsbad Daiquiri

Instructions

Shake all ingredients with ice for 15 seconds, strain into coupe. Either no garnish, or garnish with lime twist or lime wheel.

Notes

Originally made with Bacardi 1909 Superior Heritage, a 89 proof white rum, that I believe is out of production. I've been making this lately with the recently introduced Diplomatico Planas (94 proof), but any standard 80 proof light rum should work fine.

History

Part of my 2015 "Daiquiri-palooza" of weekly daiquiri riffs for an entire year. Name after the city where Becherovka is produced, Karlovy Vary (aka Carlsbad).

Instructions

Rinse cocktail glass with absinthe. Stir remaining ingredients with ice. Pour into rinsed cocktail glass.

History

Name comes from the 1960 Italian movie by Michelangelo Antonioni. It takes the Cynar + St. Germain from the Artichoke Hold and the Cynar + Amaro Montenegro from the Italian Buck to build something unique along the lines of a Bamboo or a Chrysanthemum.

Instructions

Muddle 10 mint leaves and one peach slice with simple syrup in mixing tin. Add remaining liquid ingredients and shake with ice. Double strain into DOF glass over a large ice sphere or cube. Garnish with mint sprig and peach slice.

Notes

Peach slices were in extra light syrup.

If not using the dry-ish St. George Spiced Pear Liqueur, use standard pear liqueur with a dash of Degroff's Pimento Dram bitters, Ango, etc. Depending on the sweetness of the pear liqueur used, you may want to either bump the scotch up to 1.25 oz or cut the liqueur to .75 oz.

Used some Agave 99 reposado I got on a cheap closeout, but a similar high proof blanco or repo would work fine (Luchador, Dulce Vida, Don Fulano, etc.). Part of my ongoing "4 parts, equal parts, stirred" series.

This is a good, bordering on very good, cocktail as written. The components all work together, although the ratios might be tweaked depending on what the imbiber is after. I didn't have Cadenhead rum, so used Appleton Estate Signature Jamaican Rum. I used Ahus Aqvavit, and Tremontis Mirto. I could see boosting the Mirto to 1/2 oz or a little more to accentuate its presence, perhaps backing off on the rum or vermouth by the same increment to compensate for volume (the choice of adjustment would depend on the nature of the rum used.)
