Not well balanced on first make. Used clement vsop which may be a little weak and underballed the simple... and it needed every bit.

  • Quite good. Like a sherry cobbler crossed with a piña colada. Made with straight Coco Lopez and it was not too sweet.

Little Caribbean

1 oz Pineapple rum, Plantation Stiggins' Fancy
1⁄4 oz Orgeat (Giffard at work, housemade at home)
1 rinse Pastis, Herbsaint
1 Cherry (As garnish)
Instructions

Stir with ice, strain into a coupe glass pre-rinsed with Herbsaint, and garnish with a cherry.

Notes

I remade this at home that night with housemade orgeat and enjoyed it. It yield a pineapple, anise, and rye aroma. Next, a creamy, grape, and tropical fruit sip. And rye, rum, pineapple, bitter herbal, and anise flavors on the swallow.

History

One of my friends turned regulars stopped into the Smoke Shop for dinner. For his second drinks, he requested a Manhattan. When I inquired if he wanted a classic, a riff, or even something tropical, he latched on to the last option for he had spent part of the weekend making Tiki drinks for a gathering. I decided to riff on the Martinique from Pioneers of Mixing at Elite Bars: 1903-1933, and I altered the rye whiskey base and pineapple juice into a split of rye and pineapple rum. Also, instead of sweet vermouth, I swapped in Punt e Mes embittered by Angostura and Peychaud's. I later dubbed it the Little Caribbean after a neighborhood in Brooklyn.

Tin City Sazerac

1 oz Cognac
1 oz Rye
1 rinse Absinthe
1 twst Lemon peel (As garnish)
Instructions

Stir with ice, strain into a rocks glass pre-rinsed with absinthe, and garnish with lemon oil from a twist.

History

I was inspired by all of T. Cole Newton's Sazerac riffs in his Cocktail Dive Bar book. Therefore, I began to think of drinks that I could mashup into a Sazerac akin to what I did with a Green Point for the Algiers Point. Instead of that Manhattan variation as a starting point, I selected the Red Hook to merge with a Cognac Sazerac especially with how well Maraschino and absinthe work together in the Improved Cocktail. I dubbed this one the Tin City Sazerac after the shantytown that was built in the Red Hook section of Brooklyn during the Great Depression that gave shelter to the longshoremen and sailors waiting for the economy to return.

Pillars of Society

3⁄4 oz Cynar
1⁄4 oz Curaçao (Such as Pierre Ferrand)
2 ds Absinthe (I used 1/2 bsp Kübler)
1 twst Lemon peel (As garnish)
Instructions

Build in a rocks glass, give a quick stir, garnish with a lemon twist, and serve room temperature.

History

I continued on with my tinkering with the Cynar-curaçao combination, and I began to think about Maks Pazuniak's room temperature drinks such as the Charlatan. I kept that drink's Punt e Mes base, swapped in the two liqueurs, and accented the concept with absinthe. Moreover, the curaçao in a drink such as this reminded me of Kirk Estopinal's Hotel Room Temperature. Like the Prelude to a Broken Arm that I created a short time before, I kept with the Dada art theme and named this the Pillars of Society after a 1926 piece by Hugo Ball.

Apertivo #7

1 1⁄4 oz Umeshu
3⁄4 oz Suze
5 dr Orange cream citrate
Instructions

In mixing glass, 5 ice cubes, stir long to acheive half dilution of ice, strain in nick and nora.

Notes

This is a low abv kind of drink.
You need light texture and high dilution in order to have umeshu developing aroma.
It soften Suze and gin a lot.
But it's the purpose.

You need a light gin, not juniper forward. But floral and lemony.

The drink despite the ratios could easily be taken as a contemplative Kind.
Umeshu brings variations, subtility and complexity.
