1. Splash a tiny splash of Ancho Reyes into a coupe glass, then get the rim nice and wet, then rim with chocolate sugar, then place the glass into the freezer to freeze.
2. Shake ingredients with ice and strain into the frozen coupe glass.

- Pamplemousse au Poivre — Mezcal, Pamplemousse Rose, Pepper liqueur, Grapefruit bitters, Lemon juice
- Oaxacan Daisy — Mezcal, Triple sec, Meyer lemon juice, Meyer lemon peel
- Reign In Blood — Mezcal, Herbal liqueur, Chocolate bitters, Blood Orange Juice, Lime juice
This seems pretty similar to the Applejack Rabbit, circa 1930s. I believe it was included on one of PDT's early fall menus (which is where I first had it).
