The Papa's Pilar Blonde is a clearly adulterated sweet bomb rum with strong butterscotch notes that typically aren't present in other light rums. Use a gold or dark rum with a similar sweet profile if it's unavailable.

Pour the coffee into an ice-filled rocks or old-fashioned glass. Stir in the amaro and the milk, if using. Shake a few drops of orange bitters over the surface of the cocktail.
Lots of different amari can be used in place of Averna, like Zucca for example. Half and half or cream can be used in place of the milk.

To make the cinnamon syrup, toast and break up two stick of cinnamon. In a medium saucepan, add cinnamon, 4 cups of sugar and 2 cups of water. Bring to a boil, cover and let stand for 20 minutes, strain.
To make the turmeric tea, add 1 tsp turmeric powder and 2 cups of water to a medium saucepan and simmer for 10 minutes. Strain.
Shake everything but the seltzer, double strain into a Collins glass full of ice, top with selzter.
Finishing it with seltzer makes this drink more approachable, which is important because I find that this is a very nice early-in-the-day sipper. It's also very representative of springtime around these parts with it's beautiful pink color and gin-botanical character.
