The Barrell rum is Jamaican pot still rum, aged for 7 years in previously used bourbon barrels and bottled at cask strength - 134.73 proof.

Used for the overproof rum a white agricole rum (Longueteau 62%) with great results despite being unaged.

It brings minerality and freshness to the mix.


Margaladaoma

2 ds Soy sauce
1⁄4 oz Hot sauce, Sriracha
1⁄2 oz Honey syrup
3⁄4 oz Tequila
1 oz Ale (yuzu)
1 wdg Lime (as garnish)
Instructions

Rim a Collins glass with salt. Combine all ingredients except for ale and shake with ice. Strain into the glass and top with yuzu ale. Garnish.

While this build is fine (and the people I've made it for tend to enjoy it more than me), it tends to be a little curacao heavy for me, with the sugary sweet Ronnie Zac combining with it to have a strong candied orange note that's a touch off putting.  I like to sub Bigallet China-China for the curacao for a more complex, bitter, less orange forward version.  I imagine Amaro Nonino would work as well.  Also needs a bit more dilution than I normally do (50-60 stir revolutions, so an extra 10-15 is fine), and the expressed lemon peel is a must to cut the sweetness.

Notes

Elderflower works great with both Cynar and Campari, and the grapefruit oil helps to draw the fruitier notes of it out.

History

I was tinkering around with Negroni variations for a request from an upcoming wedding held at Loyal Nine. I was inspired by Eeyore's Requiem to include other liqueurs in the mix, but I did not want it to be as extreme as Toby Maloney's neo-classic with Campari being the largest component. Therefore, I stuck with the equal parts gin, liqueur, and vermouth ratio. For a name, I kept the Winnie the Pooh theme and decided on Piglet's Lament; one of Piglet's laments in Winnie the Pooh is "It is hard to be brave when you're only a Very Small Animal."

WOW WOW WOW !!! This is quite fantastic !! My own "addition" is that the fresh grapefruit I have: the rind/skin is very thin and won't spritz. So I cut a big piece of rind, then squooshed it and smooshed it a lot, then rubbed the inside of my coupe glass with that rind to get some "spritz" into the glass for the garnish.
Anyway, this is a fantastic cocktail !!!!


Negroni Grog

1 oz Gin
1 oz Campari
3⁄4 oz Lime juice
3⁄4 oz Honey syrup (1:1)
1⁄4 oz Allspice Dram
1 oz Soda water (Not included in the shake)
Instructions

Shake all but the soda with ice, strain into a tall glass with 1 oz soda water, fill with crushed ice, and garnish with an orange wheel, cherry, lime twist flag. A double old fashioned glass with a Navy Grog ice cone would work well too!

History

A three-way cross between a Negroni and both Don the Beachcomber's and Trader Vic's Navy Grogs. Campari goes well with grapefruit and allspice flavors, so I knew it was going to be a win. Since the bar had a gin theme, I figured that my tropical drinks needed to eschew rum for a bit.
