1⁄2 oz Strawberry/Raspberry shrub (*homemade)
1⁄4 oz Lime juice
Instructions

Shake, strain into a chilled coupe

Notes

*for any cold-process shrub: mix equal parts fruit/peel/herb with sugar and apple cider/red wine vinegar; let stand in a mason jar at room temp for 2 days, strain and re-jar; refrigerate for two weeks and keep for 6 months +

Instructions

Dry shake, shake, strain into a cocktail glass, garnish with a light dusting of cayenne and piece of crystallized ginger.

My best go at redeeming Malibu.

Shake and strain all but the bitters - float this on top. To shortcut the ginger infused rum, I did a rapid infusion with an ISI cream whipper and fresh ginger

Original calls for ginger infused rum; as a shortcut I did a rapid infusion of fresh ginger in an ISI cream whipper. Original has cardamom-sugar rim instead of the bitters.

  • Comes out a beautiful color orange. This is actually much more complex than you'd expect. Strong citrus flavor, and the Aquavit adds that extra layer to the flavor.
  • Used Brennivín. Tastes mostly like orgeat and lime although a tiny bit of caraway can be sensed. Would reduce both next time.
  • Made with Brennivín. Pale pink, but the taste is not so "girly." Good! — ★★★★
