  • In this case, I favor the sweet vermouth version. I believe the Punt e Mes submerged the Cynar. Also, it works with reducing the Cynar to 0.5 oz. Using Antica emphasizes its IPA characteristics - not worth repeating.

3⁄4 oz Lemon juice
1⁄2 oz Ginger syrup (skinny)
1⁄4 oz Licor 43
1⁄4 oz Demerara syrup (skinny)
1 rinse Virgin Islands Rum, Cruzan Blackstrap
Instructions

Add the eggwhite and all liquid ingredients except for blackstrap rum. Shake once without ice and once very hard with ice.

Rinse a collins glass with a small amount of blackstrap rum. Add cold draft cubes and strain drink into glass.

Notes

Leave a little room at the top of the glass so you can smell the blackstrap.

This is my go-to cocktail. I have posted as originally created, but feel free to swap out the Templeton with another heavily spiced rye (Willett Straight Rye works particularly well). Angostura bitters work, but the Fee have a more pure angostura flavor and it shows in the drink.

  • Comes together after it sits for a bit. My first experience using salt in this manner, and it works interesting magic with the Mezcal and Cynar, in particular. I used Sombra Mezcal and Pierre Ferrand Dry Curaçao
