Quarantine Order

1 1⁄2 oz Jamaican rum (Rum-bar Gold)
1⁄2 oz Cinnamon syrup
1⁄2 oz Passion fruit syrup
Instructions

Combine ingredients in a shaker with ice, and shake until well-chilled.
Strain into a glass over fresh ice, and garnish with a lime wedge and cherry.

  • There's a lot going on here. If you're chasing the cinnamon-grapefruit tiki combination, I prefer the Tuscan Toucan for that. If you're chasing something with passionfruit and Jamaican rum, the Hurricane and Lost Lake are great options. This drink, while good, hits an unhappy medium between other really fantastic tiki drinks. — ★★★

Sacred Monkey Forest

1⁄4 oz Fernet Branca
1⁄4 oz Herbal liqueur, Green Chartreuse
1⁄4 oz Demerara syrup
1 rinse Scotch (Smoky Islay such as Laphroaig 10 Year)
Instructions

Stir with ice and strain into a cocktail coupe rinsed with smoky Scotch.

History

I was inspired by the Krakatoa that I had at Drink as a patron back in 2008 and that I started making in the past few weeks on the other side of that same bar. To the house classic, I removed the Chartreuse on fire aspect and included the liqueur in the mix. Taking a page from Avery's Arrack-Ari, I added in a smoky Scotch rinse, and from the Banana Toronto, I dosed in some banana liqueur to mingle with the Fernet. For a name, I uncovered the Sacred Monkey Forest which is a park in Indonesia (where Batavia Arrack is made) where one can feed and interact with the monkeys at one's own risk (yes, they do and will bite).

Enjoyed this very much -- did not have Green Chartreuse so substituted Dolin Genepy with a little more than .25 oz to account for ABV difference, worked well!

Bitter Loser

2 oz Dark rum (Jamaican)

Instructions

Shake everything, except ginger beer and garnishes, with crushed ice. Then pour ginger beer into shaker and stir. Pour unstrained into a tall glass with three or four ice cubes. Garnish with pineapple chunk and spring of mint.

Using Creme of Coconut (1:1 sugar to coconut milk), this was a delicious drink. Well balanced with some funk from the dark rum and orgeat, but without the heavy marzipan some orgeat drinks can get. A great staple.

I don't have the referenced book, but every mention I see of the cocktail in the book says that it used cream of coconut (Coco Lopez) in particular. I am curating the recipe to reflect that since coconut cream is a different beast (unsweetened). If someone has the book and confirm or correct me, please do.
