Catskill Orchard
Add ice to a shaker. Add ingredients and stir well. Drain into a cocktail glass.
- St. Crispin — Demerara Rum, Calvados, Orange bitters, Bitters, Apple juice, Honey syrup
- The Right Way — Cognac, Rye, Cherry Liqueur, Bitters, Peychaud's Bitters, Orange peel
- Orchard Sun — Bourbon, Apricot liqueur, Averna, Lemon juice, Lemon peel
- Carmen Miranda — Apple brandy, Rum, Pear eau de vie, Orange bitters, Rich simple syrup 2:1
- Dolly Varden — Cognac, Cherry Liqueur, Chocolate liqueur, Bitters, Brandied cherry
Used Chinese lychee wine (14% ABV) instead of liqueur, which worked quite well (I don't like overly sweet drinks). The result was balanced in flavor, with the pastis (Duval) melding surprisingly well with lychee fruit. The color was amazing: Duval pastis contributed a shifting pearlescent shimmer.
