The Florence Sling

1 1⁄2 oz Gin
3 oz Cheerwine
Instructions

Shake with ice the lemon juice, Benedictine, and gin. Pour the Cheerwine soda into the shaker and give it a light stir or two. Strain into good sized rocks glass.

Notes

Cheerwine is a cherry soda originally from North Carolina - first made in the 1917. I wanted to modify a cocktail that called from some sort of cherry liqueur *and* had seltzer or soda water and the "#1" Singapore Sling recipe from 1937 fit that bit. Cheerwine isn't nearly as cherry-tasting as I'd recall so I may remake with some Cherry Heering or just some of the Maraschino cherry syrup stirred in. Or just garnish with a cherry.

History

"Cheerwine is a cherry-flavored soft drink produced by Carolina Beverage Corporation of Salisbury, North Carolina. It has been produced since 1917, claiming to be "the oldest continuing soft drink company still run by the same family"" - from Wikipedia

  • This drink blends sweet, smokey and spiciness beautifully. Some of my friends enjoy this with a smoked salt-rimmed glass. I also sometimes spray with a mist of Laphroaig 10yr. Not for those who don't like spice!

The Surplus

1 1⁄2 oz Pisco
3⁄4 oz Aperol
1⁄2 oz Ancho Reyes chile liqueur
2 pn Salt (Himalayan Pink Rock Salt)
Instructions

Shake with ice, strain into a frozen coupe glass.

Notes

This is the first-try recipe. Interesting, and needs a bit of experimentation for the best balance. And the Himalayan Pink Rock Salt adds an interesting bit of pretension.

History

I had a large surplus of bottles on the bar and just threw a few things together as an experiment.

Sweet and spicy - nice use of Pisco as a base for elderflower, chile and citrus of Aperol.

Very nice balance of sweet, bitter, and slight spice.  Will make again.

Second Spring

1 oz Manzanilla sherry (San Leon)
1 1⁄2 T Cinnamon Schnapps liqueur, Goldschlager
1 1⁄2 T Kummel, Combier
1 1⁄2 T Ginger liqueur, New Deal
2 ds Saffron bitters, Barkeep
1 Cinnamon stick (as garnish)
Instructions

Stir liquid ingredients and pour over large cube in large old fashioned glass. Ignite one end of cinnamon stick and quickly extinguish by placing lit end into drink.

Notes

The liqueur measurements are a little tricky, so I recommend pre-blending equal parts of the kummel, ginger liqueur, alspice dram, and Goldschlager (probably 3/4 oz of each, which will yield four drinks' worth), and then using 3/4 oz of that mixture in your stirring vessel instead of the individually measured liqueurs.

History

The name is taken from Albert Camus, who said, "Autumn is a second spring when every leaf is a flower."

  • Simply put, a great cocktail. Used Ilegal mezcal (joven) and increased the Rittenhouse rye to 1.25 oz.. Lacking sufficient Averna, I used 0.25 oz Averna and 0.50 oz Meletti. Rate 5.0 easily
  • Well balanced, and not too sweet, even with the demerara syrup! — ★★★★★
  • Leave out the syrup.
  • 4.5
  • Sweet enough without the syrup.
  • Good. Might try first without the Demerara next time as it's quite sweet to my taste (but pretty balanced, so I might start without and add to taste.) Sweet + Mezcal + Campari is different and interesting.
  • nice boozy cocktail. I add a spray of Laphroaig 10yr.

It's not sweet, you could remove the barspoon of demerera I suppose.  I find it balanced, everything plays well together.  It's a popular cocktail at the bar for smokey, spirit forward types.

Ajvan commented on 4/10/2020:

Skipped the syrup as suggested and the result is the kind of spicy, boozy drink I'm a sucker for.
