Caribbean Coffee Crush

1 3⁄4 oz Añejo rum (Kirk & Sweeney 12 Year)
1⁄2 oz Falernum (Homemade)
1 oz Simple syrup (Homemade Coffee-Stout Syrup)
3 wdg Pineapple
1⁄2 oz Lime juice
Instructions

Muddle the large 1" pineapple wedges with falernum. Add remaining ingredients, shake, fine strain, 2x rocks glass, crushed ice. Garnish with a pineapple leaf and wedge.

Sailors Take Warning

1⁄2 oz Grenadine (Employees Only)
1⁄4 oz Lime juice (strained)
Instructions

Build in a high ball glass 1/2 full of ice. Stir gently to mix. Garnish with a lime wedge.

Notes

Don't use red dye and corn syrup grenadine. I used Employees Only Grenadine. The pomegranate and spices from the grenadine adds a great deal of depth. Use Eastside Below Deck Silver rum or El Dorado 3 year silver for best results

Agree with the 1 oz Sibilla and 1/2 Cherry Heering. The overall profile is similar to a Negroni (complex bitterness with satisfying finish), which is a compliment

Excellent, but quite potent. The equal parts Heering and Sibilla complement one another well. This is a great vehicle for appreciating Sibilla. I didn't see the garnish (lemon twist-discarded?-and Luxardo cherry) until later so they were inadvertently omitted. I might serve this over a large rock next time to make it more of a slow sipper.

  • Go light on the orgeat
  • Although the orgeat lends a pleasant nose, something about this gives a slightly "grainy" mouthfeel. I prefer a standard whiskey sour. — ★★★★
