Trans-Pacific

1 1⁄4 oz Sotol (Siempre)
1⁄2 oz Ginger liqueur, New Deal
1⁄2 oz Ancho Reyes chile liqueur
3⁄4 oz Lime juice
1 Ginger (Candied, as garnish)
Instructions

Shake and strain into chilled cocktail glass. Garnish.

Notes

This also works very well with basil eau de vie (from St. George), which gives it more of a southeast-Asian flavor profile. I garnish that variant with a kaffir lime leaf and call it "Muy Thai" (as in "very Thai").

  • Sublime. Sophisticated and smooth with a spicy kick at the finish. I used Mesh & Bone sotol and Ancho Reyes Verde (sooo much better than the red stuff).

  • Per earlier comment, I also added Chicory-pecan bitters (4 drops, and liked it more.
  • Mezcal Negroni variant. For Arthur.
  • Good if you're in the mood for smoky. I added some chicory-pecan bitters to round this out a bit.
  • Only had Cynar 70 which was a bit much. But halving the Cynar and increasing the Bonal by half made a tasty drink.

Tried with Alipus Mezcal, without the mole bitters. Good but Will not make again. Strong Mezcal and Cynar in mouth.

Something is missing. Maybe the bitter dash...

Lightly curated: paraphrased instructions to fix copyright infringement, added a little history and changed name to reflect origin more clearly.

Shawn C commented on 11/05/2023:

This was the maiden excursion for a small batch of lavender bitters (tincture) I prepared. This is a good cocktail with all of the elements (including the expressed lemon) accounted for in the flavor and nose, but the 2.5 oz of Plymouth seems a bit much, pushing the alcohol and volume to the high side. When I make it again I will cut that to 2.
