1⁄2 oz Chamomile syrup
1⁄2 oz Lemon juice (juice of half a lemon)
Instructions

Shake, strain, up, garnish with a lemon wheel studded with cloves.

Notes

MacGregor makes a weak (2:1 water to sugar) chamomile syrup: 24 oz water to 8 oz chamomile tea to 16 oz evaporated cane sugar; heat the sugar and water to a boil, add the tea, simmer for five minutes, strain and let cool.

Brian writes that Qi White Tea Liqueur is no longer available.


Substituted Qi with licor de te Bruja Bella. Should have looked up the specifics of Qi beyond the tea flavor because the Bruja Bella is quite sweet and Qi is not. If substituting with another tea liqueur, ease off on the maple or it will dominate and this becomes hard to tell apart from a Filibuster.

Quite good and simple. I used Laphroaig 10 yr. The oxidized woodiness of the the dry oloroso sherry bridges the peat essence of the Scotch to the orange bitter and sweet flavors of the amaro. Varying the Bigallet vs. the Scotch could easily balance this cocktail toward individual tastes.

1⁄2 oz Raspberry syrup (or cassis)
2 spg Basil (one muddled, one as garnish)
Instructions

Muddle, stir, strain over crushed ice in a julep cup, garnish with basil.

Optionally, include a dash or two of bitters.

Unfortunately, "Solera" sherry could be any of them - the point of Sherry is that it's aged in a solera system. Fino (or Manzanilla) sounds like the way to go here.
