Second Spring

1 oz Manzanilla sherry (San Leon)
1 1⁄2 T Cinnamon Schnapps liqueur, Goldschlager
1 1⁄2 T Kummel, Combier
1 1⁄2 T Ginger liqueur, New Deal
2 ds Saffron bitters, Barkeep
1 Cinnamon stick (as garnish)
Instructions

Stir liquid ingredients and pour over large cube in large old fashioned glass. Ignite one end of cinnamon stick and quickly extinguish by placing lit end into drink.

Notes

The liqueur measurements are a little tricky, so I recommend pre-blending equal parts of the kummel, ginger liqueur, alspice dram, and Goldschlager (probably 3/4 oz of each, which will yield four drinks' worth), and then using 3/4 oz of that mixture in your stirring vessel instead of the individually measured liqueurs.

History

The name is taken from Albert Camus, who said, "Autumn is a second spring when every leaf is a flower."

  • Simply put, a great cocktail. Used Ilegal mezcal (joven) and increased the Rittenhouse rye to 1.25 oz.. Lacking sufficient Averna, I used 0.25 oz Averna and 0.50 oz Meletti. Rate 5.0 easily
  • Well balanced, and not too sweet, even with the demerara syrup! — ★★★★★

  • Good. Might try first without the Demerara next time as it's quite sweet to my taste (but pretty balanced, so I might start without and add to taste.) Sweet + Mezcal + Campari is different and interesting.

It's not sweet, you could remove the barspoon of demerera I suppose.  I find it balanced, everything plays well together.  It's a popular cocktail at the bar for smokey, spirit forward types.
