Pay Day

Instructions

Muddle limes, strawberries, simple syrup.

Then add Rhum Agricole, St. Germain and Clement Creole Shrubb.

Shake and strain into chilled coupe glass.

Top off with Barritt's Ginger Beer.

Garnish with lime wheel.

Notes

I came up with this cocktail because I really like Rhum Clement's lineup and I also like their company. I was having trouble coming up with a good match for our ginger beer until this cocktail. The Rhum Agricole stands out beautifully, but mixes well with strong-tasting flavors like strawberry and ginger beer.

History

Originally, I used Stirrings' Key Lime syrup in this and still prefer it over simple syrup. However, key lime syrup is hard to find, so simple syrup is an acceptable substitute.

Frothy and refreshing. Heavy on the tequila, but i like that. Like the previous commenter, i went with 1/4 oz Simple Syrup and found it plenty sweet. The St. Germaine (elderflower liqueur) gets a little over powered by the other ingredients so I'd maybe take that out and up the simple syrup back up to 1/2 an ounce. Fresh orange juice is quite sweet itself so that not a lot more sweetner is needed beyond that for my taste.

This was a light and pleasant drink, but I felt like the orange juice and elderflower were a bit at odds with each other. (I did have to use store-bought OJ rather than fresh-squeezed.) Like the previous reviewer I used just ¼ oz of simple syrup and wouldn't have wanted it sweeter.

  • I was craving something with Zucca and this was perfect. I had no cranberry liqueur however, so I subbed in Pama for the tart fruit liqueur. It worked well also.

4+ more like a 4.5. I could even see giving it a 5 just for the simple (equal parts), effective and innovative combination of components which blend together seamlessly. The Clear Creek Cranberry is a component I have wanted to circle back to, in order to find what really works with it--I didn't have Zucca on my bingo card for that. The sherry provides some wine-base depth.

  • Enjoyable. No sugar necessary. Add a dash of orange juice. Decrease rhubarb bitters to 6 dashes when doubling the receipe.
  • Double everything but garnish. :-)
  • Used Bulleit; would be better with 3 dashes of rhubarb bitters instead of 4
  • Nicely balanced, complex but light drink.
  • Powerful, with strong flavors. 4 dashes of Rhubarb bitters may be 1 or 2 too many with Fee Brother's bitters. May be better with non-overproof rye. Good drink. Alice liked. — ★★★★

We had a Life Sentence vs. Prosecutor Throwdown; these cocktails are rather similar (Benedictine vs. Yellow Chartreuse; bitters or not; slight differences in Rye: liqueur ratio). In these recipes, the Benedictine and Yellow Chartreuse are pretty interchangeable. While both were good, for us, the slight edge went to the Life Sentence; the bitters made the difference. Used Wild Turkey Rye.

Dan commented on 10/25/2014:

Hard to believe it needs the simple!

Mine wasn't candylike: reduced st germain to .5, omitted syrup, probably would do better with even less st germain as it overpowers the creme yvette even at the reduced amount, sprig of rosemary which I didn't think would work but lent a nice spicy herbal touch to tame the sweetness a little.

This pre-dates Sasha. It's based off of a century old classic that they made famous by taking it out of obscurity and putting on a menu at the John Dory Oyster Bar. Couldn't find which book had the curaçao version but I did find a few that had the grenadine Star Daisy. The NY Times article (behind a paywall) about it describes the lineage a little better (but I can't get to it now).
