St Columb's Rill

2 oz Irish whiskey, Bushmill's
1⁄4 oz Herbal liqueur, Green Chartreuse
Instructions

Stir with ice, strain, coupe. No garnish.

Notes

Works very nicely with Monkey Shoulder for the whiskey in the absence of Bushmill's.

Note: The published Death & Co. recipe excludes the Xocolatl bitters, but Ward specifically lists it in his recipe (see the 2010 link.)

  • Excellent! Used martini dry vermouth and Bushmill's Black Bush.
  • Nice, the Chartreuse isn't too strong, allowing you to enjoy the complex flavours. Works well with Irosh Whiskey, complex flavour profile.

Jojiro commented on 1/03/2022:

The original recipe specified adding 1 dash of Bittermens Xocolatl Mole Bitters, and the cocktail name was "St. Columb's Rill", not "St. Columbus Rill". St. Columb's Rill is a stream on which the Bushmill distillery was originally built. The name pays tribute to Saint Columba of Cornwall, and has nothing to do with Columbus.

Do you have a link to that effect? My copy of Death & Co. has this as written. Thanks, Zachary

yarm commented on 9/29/2022:

They must've fixed it up after the 2014 printing. Mine bought in the first month of it coming out has it spelled as St. Columbus, and hence, that's the way it appears in my blog when I made it.

Craig E commented on 9/30/2022:

Updated name and ingredients accordingly. Thanks all!

benjajinj commented on 1/19/2025:

My copy of the book has no mole bitters - neither does the ebook.

Shawn C commented on 2/16/2025:

Curated to add a reference to the blog link with Phil Ward's specific listing of Xocolatl bitters that is missing from the Death & Co. recipe. That should settle any further confusion about whether the bitters were intended to be there.

Too high proof for egg white: it curdled.
